Ingredients:
- 450g bread flour
- 1 tsp salt
- 10g of vinegar
- 55 mL Gold of Irida
- 200-250 mL lukewarm water
Method:
- Mix the flour with the salt in a stand mixer with the hook attachment.
- Add the vinegar, olive oil and warm water and beat in the mixer until combined.
- Remove from the mixer and place on a lightly floured work surface.
- Make a ball with the dough and cover it with a tea towel. Let the dough rest for 30'.
- Shape the dough into a stick shape and cut into 4 pieces. Make 4 balls of dough.
- Use a rolling pin to roll out the dough on a lightly floured surface. The thinner the better.
- Repeat the process with all 4 sheets of pastry.
- You can use the pastry to make Sarafolia or for pies. Otherwise, you can roll it in some baking paper and cling film and leave in the fridge to use the next day.
