Fava with Gold of Irida

Ingredients:

  • 55 mL Gold of Irida EVOO
  • 120 g Onion, finely diced (plus some for garnishing)
  • 200 g Fava Beans
  • 50g Carrots, finely diced 
  • 1 Bay Leaf
  • 1-1.5 Liters of Water 
  • Fresh Thyme 
  • Salt and Pepper to taste

Method:

  1. Heat the olive oil over medium heat in a pot.
  2. Add the onions, carrot and thyme and sauté for 7-8 minutes until translucent.
  3. Add the fava beans, bay leaf and water. Stir occasionally until it reaches a boil. 
  4. Once it starts boiling, remove the Bay leaf and lower the heat to a simmer.  
  5. Let it simmer for about 50 minutes.
  6. Every now and then skim off the foam. 
  7. Towards the end of the boiling, season well with salt and pepper.
  8. Remove from heat and use a hand blender to blend until smooth and creamy. 
  9. Serve with some onion and a generous amount of Gold of Irida EVOO.
