Ingredients:
- 55 mL Gold of Irida EVOO
- 120 g Onion, finely diced (plus some for garnishing)
- 200 g Fava Beans
- 50g Carrots, finely diced
- 1 Bay Leaf
- 1-1.5 Liters of Water
- Fresh Thyme
- Salt and Pepper to taste
Method:
- Heat the olive oil over medium heat in a pot.
- Add the onions, carrot and thyme and sauté for 7-8 minutes until translucent.
- Add the fava beans, bay leaf and water. Stir occasionally until it reaches a boil.
- Once it starts boiling, remove the Bay leaf and lower the heat to a simmer.
- Let it simmer for about 50 minutes.
- Every now and then skim off the foam.
- Towards the end of the boiling, season well with salt and pepper.
- Remove from heat and use a hand blender to blend until smooth and creamy.
- Serve with some onion and a generous amount of Gold of Irida EVOO.
