Ingredients:
- 3 eggs
- 1 cup of milk (or vegan alternative)
- 1 vanilla bean, or 1 tsp vanilla extract
- 1 pinch of salt
- 4 thick slices of bread
(about ¾ inch each)
- ½ cup Gold of Irida EVOO
Method:
- Whisk together the eggs, milk, vanilla, cinnamon, and salt in a bowl and set aside.
- Place the bread in a large ovenproof dish that can hold the bread and pour over the egg mixture.
- Let them sit for 10 minutes and absorb the mixture.
- Pre-heat a pan over medium low heat and add EVOO.
- Add the slices to the pan one by one and cook for 2-3 minutes on each side until golden.
- Serve with a drizzle of honey, a sprinkle of cinnamon and a handful of berries.
For serving:
- 4 tbsp Greek thyme honey
- 4 tbsp cinnamon
- Handful of fresh blueberries or raspberries
